Recipe: Creamy Mushroom and Kale Cauliflower Risotto (Instant Pot)


This time of the year everyone is heading to their friendsgivings- for work, with their friend groups, or workout buddies. This year I'm going to my first friendsgiving, so I obviously had to go full out. So I thought what's comforting, but also kind of "healthyish," so it can represent me and everyone can enjoy it!?! I remember my mom making me a cauliflower risotto a few months ago, but I think half of it was actually from frozen and the other half she just added in some of her favorite vegan cheese. I figured why not make a cauliflower risotto from scratch! This is the perfect dish to bring to your friendsgiving or even something easy and healthy for Thanksgiving!

Ingredients:

  • 3 garlic cloves

  • 3 cups of crimini mushrooms

  • 2 cups of organic kale

  • 1/4 cup of extra virgin olive oil

  • 2 cups of vegetable broth (or bone broth)

  • 2 bags of Trader Joe's Cauliflower Rice

  • 1 Triangle of Goat's Milk Gouda Cheese (Trader Joe's)

  • Pasture's of Eden Sheep's Milk Feta (Trader Joe's)

Here's how it went down:

  1. Cup up three garlic cloves

  2. Place 3 cups of mushrooms on the side (I used almost the entire bag of crimini mushrooms from Trader Joe's)

  3. Place 2 cups of Organic Tuscan kale on the side as well - I did not cut up the mushrooms or kale

  4. Throw your Instant pot on Saute without the top on and add 1/4 cup of extra virgin olive oil and your garlic

  5. Stir until aromatic (this will happen quickly)

  6. After that, add mushrooms and kale for about 4 minutes until the mushrooms start to brown and soften

  7. Add 2 cups of organic vegetable broth (or bone broth - your choice!)

  8. Add in two bags of cauliflower rice (uncooked from Trader Joe's)

  9. Throw the Instant pot top on and switch it to the manual mode for 10 minutes

  10. While the Instant Pot is cooking cut up cheese

  11. I choose goat's milk and 100% sheep's milk cheese because these two cheese can be easily digested compared to your typical Parmesan and mozzarella - cut cheese into cubes

  12. Be sure to have a few cubes because why not!

  13. Once the instant pot beeps turn the valve from sealing until venting

  14. If there is a ton of excess water from the cauliflower put a strainer in the sink and just dump some of the water out

  15. Add in 1 block of the goat gouda cheese from Trader Joe's and 3/4 of the sheep's milk cheese

  16. Mix up rice and let it sit on warm for as long as you would like (mine has been on for over three hours).

  17. Optional: to throw it on the manual setting again for another 5 minutes to melt the cheese
