Recipe: Black Bean Brownie Fudge


My mom had a special treat waiting for me when we arrived in Aspen. Brownies that tasted like straight up fudge, but with a secret ingredient. What was it?.... Black Beans. Some of you might be thinking "ew, gross. I would never eat black beans nor put them in a treat like a brownie." BOY are you wrong. These brownies are perfect for your chocolate craving oh and they are healthy. Check out the clean ingredients below. TIP: Cut and keep in the fridge and eat cold. These brownie's are best enjoyed as thick fudge. Peep Jake's (my boyfriends) reaction.

Ingredients:

  • 1 1/2 cups black beans (about 1 and a half standard size cans)

  • 2 tbsp cocoa powder

  • 2/3 cup quick organic oats

  • 1/3 cup pure maple syrup

  • 1/4 cup coconut oil

  • 2 tsp pure vanilla extract

  • 1/2 tsp baking powder

  • 1/3 cup of dried cranberries

  • A handful of Dandie's marshmallows

  • A handful of Enjoy Life Dairy Free Chocolate chips (I love the chunks)

Directions: Add all ingredients in a food processor besides the marshmallows and chocolate chip chunks . Fold in chocolate and marshmallows. Add a few extra chocolate chips on top so they melt on the surface. Cook on 350° for 17 minutes.
