Recipe: Banana Oatmeal Collagen Bites


I wanted to experiment with a fun muffin that was healthy enough to eat for breakfast and a snack so the Banana Oatmeal Collagen Bites were born:

  • 1 banana mashed

  • 2 scoops of Vital Proteins collagen

  • 2 Vital Farm eggs

  • 1 cup of Bob's Red Mill gluten free oats (put in blender to make a flour consistency)

  • 1/4 cup of Artisana coconut butter

  • 1 teaspoon of vanilla extract

  • 1/2 teaspoon of baking soda

  • 3 tablespoons of maple syrup

  • All Added and blending in a food processor

  • Added some additional cinnamon to a few to test test those...they were great!

Cook on 375 for 15 minutes
